This is one of our favourite breakfasts; we LOVE protein pancakes!
Being gluten and refined sugar free, they’re sure to be one of your new breakfast faves as well.
Mix together until smooth:
- 2 ripe bananas, mashed
- 3 eggs
- 2 scoops of vanilla protein powder
- ½ a cup of almond meal or LSA
Lightly spray coconut oil in a pan over low heat. Spoon dollops of the mixture into the pan, turning once bubbles are appearing. If the first round gets burnt bits, turn the heat down even lower!
Serve by themselves or with our favourite toppings:
- natural yoghurt
- frozen blueberries simmered in a ¼ cup of apple juice
- crushed nuts
Place the leftovers in an air tight container in the fridge, and you’ll also have yourself some nutritious and protein packed snacks for the next day too.
