This salad tastes AMAZING!
Plus, it is well and truly packed with nutrients and vitamins - get it into your bellies!
- 1 cup of spinach leaves
- 1/2 cup of kale leaves
- 1/4 cup of shredded chicken breast
- 1/4 cup of roasted sweet potato
- 1/2 cup of grated carrot
- 1/2 cup of chopped cucumber
- 1 tablespoon of goji berries
- 1/4 avocado
- 1/4 cup of chick peas
- 1 hard-boiled egg, sliced into pieces
- a squeeze of lemon juice
- a dash of olive oil
Toss all ingredients together in a large bowl and then eat straight away!
If you are going to eat this later in the day, add the lemon and olive oil just before eating.
